Any excess moisture on the potatoes can cause the oil to splatter in the fryer and prevent the fries from getting crispy. Make sure the potatoes are completely dry before moving on to the next step.

Choosing the Right Oil

This first stage of frying is also known as "blanching," and it helps cook the inside of the fries and removes any remaining moisture.

Second Stage of Frying

After the fries have drained, increase the temperature of the fryer to around 375°F (190°C). This higher temperature is used for the second stage of frying, which is what gives the fries their crispy exterior. Once the fryer has reached the new temperature, carefully lower the fries back into the fryer basket.

Fry the fries for an additional 2 – 3 minutes, or until they are golden brown and crispy. You may need to stir the fries gently with a slotted spoon during the second stage of frying to ensure that they cook evenly on all sides. Keep a close eye on the fries as they can quickly go from crispy to burnt at this high temperature.

Seasoning and Serving

Once the fries are done frying, carefully remove the fryer basket from the fryer and let the fries drain for a few seconds. Then, transfer the fries to a large bowl or a serving platter. Immediately sprinkle your desired seasonings over the fries and toss them gently to coat them evenly.
